Sweet Potato Bake
Sweet potatoes are low in calories, full of vitamins and very versatile. Never refrigerate them because they develop an "off" flavour. Leave them in a cool place.
Serves Four to Six
Ingredients:
- 4 sweet potatoes
- 1/4 cup (50 mL) olive oil
- 1 tbsp (15 mL) brown sugar
- 12 sage leaves, slivered
- 1/4 cup (50mL) dark rum
- Salt and freshly ground pepper to taste
Directions:

Preheat oven to 400° (200°C). Peel sweet potatoes and cut each length-wise into 4 slices.
Combine oil, sugar, sage leaves and rum in a bowl. Toss with sweet potatoes.

Place sweet potatoes in a single layer, slightly overlapping in a roasting pan and bake for 45 minutes turning occasionally. They should be soft on the inside and crispy outside.
