Sweet Potato Bake

Sweet potatoes are low in calories, full of vitamins and very versatile. Never refrigerate them because they develop an "off" flavour. Leave them in a cool place.

  1. Preheat oven to 400° (200°C). Peel sweet potatoes and cut each length-wise into 4 slices. Combine oil, sugar, sage leaves and rum in a bowl. Toss with sweet potatoes.
  2. Place sweet potatoes in a single layer, slightly overlapping in a roasting pan and bake for 45 minutes turning occasionally. They should be soft on the inside and crispy outside.
